Carrot Raisin Salad


Super Carrot Raisin Salad

  • 3-6  medium organic carrots, grated
  • 2-3 organic apples, grated. Add lemon juice immediately to prevent oxidizing (browning)
  • ½ cup organic raisins (optional)

Healthy Orange dressing:

  • 3 Tbsp olive oil
  • Juice of 1 fresh organic lemon
  • Juice of 1 fresh organic lime
  • Raw goat milk yogurt
  • 1 slice of fresh organic ginger
  • 1 whole orange, peeled and seeded
  • Celtic sea salt and pepper to taste



Simple!! Toss all ingredients with Orange dressing.

Apples are high in Vitamin A, Vitamin C, Vitamin B6 and Thiamine.

Vitamin B6

Vitamin B6 is also known as Pyridoxine and is an amino acid. The benefit of vitamin B6 is that it changes fats, proteins, and carbohydrates into energy. B6 also helps to maintain the immune and nervous systems. It helps to fight heart disease. The vitamin also prevents the formation of homocysteine that lets cholesterol be deposited around the heart.

B6 can be found in meats, high protein foods, poultry, eggs, nuts and dairy products. Fruit and vegetables such as avocados, bananas, mangos, and potatoes all have B6.

Deficiencies of vitamin B6 can occur in some individuals. Signs of B6 deficiency include dermatitis, glossitis-sore tongue, depression, confusion, and convulsions. Alcoholics and older adults are more likely to be deficient. Alcohol promotes the loss of B6 from the body.

Benefits of vitamin B6 include treating seizures resulting from B6 deficiency, diabetes, heart disease, varicose veins, and premenstrual syndrome. B6 may also relieve symptoms of carpal tunnel syndrome, and it promotes healthy cardiovascular, and circulatory health.
