Broccoli Salad

Ingredients:

-Broccoli
-Balsamic Vinegar
-Maple Syrup
-Olive Oil
-Coconut Secret Coconut Aminos
-Sesame Seeds
-Pepper Flakes

Directions:

First, steam broccoli for 2 minutes.

Then, simply toss the steamed broccoli with 1 tablespoon of balsamic vinegar, maple syrup, olive oil, and Coconut Secret coconut aminos.

Finally, add some sesame seeds and pepper flakes.

Chard and Quinoa Salad

Ingredients:
2 bunches organic Swiss chard
2 tablespoon capers
2 tablespoon black Kalamata olives, sliced
1/4 teaspoon turmeric, freshly grated
1/4 teaspoon ginger, freshly grated
3 tablespoons Italian parsley, chopped
1 cup cooked sprouted quinoa, ideally cooked in homemade chicken broth (1 to 2 ratio)
2 tablespoons of Coconut Secret coconut aminos
1/4 teaspoon sea salt

Directions:
– Remove the leaves of the Swiss chard from the central stems and thinly slice the stalk of leaves
– Put olive oil in a large sauté pan and add the chard, capers, and olives
– Add the cooked quinoa, ginger, turmeric, coconut aminos, parsley, and sea salt
– Toss and cook for 2 to 3 minutes
– Serve with delight!

-1 baked yam (bake at 350 for 1.5 hours in covered pyrex dish)

Wild Rice Salad

Ingredients:

1 drop Lemongrass Essential Oil
2 cups Cooked Wild Rice
1 cup Frozen English Peas — thawed
1 peeled Organic Orange — blended
3 tablespoons Fresh Lime Juice
2 tablespoons Minced Fresh Mint
1 1/2 teaspoon Grated Orange Rind
1/2 teaspoon Celtic Sea Salt
1/8 teaspoon Chili powder

 

Directions:

1. Rinse rice

2. Use 1 part rice to 3 part water or homemade chicken broth

3. Bring to a boil, then reduce heat to low. Simmer 40 minutes or until tender. Drain and fluff.

4. Toss with remaining ingredients and enjoy!

Place 1 piece of salmon in a pan w/ a small amount of homemade chicken broth

bring to a boil, then turn off the heat w/ lid on

let it steam

 

Dressing

1 roasted red bell pepper

1 roasted plum tomato

Slice ginger

1 mild green pepper

blend skinned tomato, deskinned pepper w/ small slice of ginger

couple of small slice of mild pepper (light green and medium size)

 

 serve w/ salad and grated jicama tossed in lime juice

 

Pour on salmon after it is cooked to your desired consistency

Roasted Red Bell Pepper Soup

Ingredients:
1 -2 cups red lentils
1 fresh flat-leaf parsley sprig, finely chopped (including stem)
4 cups homemade chicken broth
1/4 teaspoon cumin

1/4 teaspoon Celtic sea salt
4 tablespoons extra-virgin olive oil
2 carrots finely diced or sliced
2 stalks of celery finely diced or sliced
1 onion finely chopped
2 cloves garlic, chopped

3 red bell peppers (roasted- see below)

2 Anaheim chilis (roasted- see below)

 

 

Directions:

To roast peppers and chilis:

1.    Broil peppers (you can use the toaster oven) until skins are blackened .

2.    Immediately transfer the peppers to a plastic or paper bag; Seal and let stand for 15 to 20 minutes. The steam within the bag will help to loosen the skins.

3.    Remove from the bag. When cool enough to handle, remove peel and seeds with hands or a knife.

4.    Blend in blender and set aside for soup.

For soup:

1. Sauté garlic, onions, parsley, carrots and celery in olive oil.

2. Add the red lentils, cover the pan and cook over medium flame for 30 min.

3. Add cumin and celtic sea salt. Stir well and often, simmer covered.

5. Add roasted red peppers and chilis and heat until warmed.

4. Serve and delight in savory health

Red bell peppers are a great whole food source of Vitamin C and Vitamin A.

Functions of Vitamin C in the Body:
Vitamin C is vital for the immune system and tissue repair.  It is needed for  the production of collagen in the connective tissue, and used by the adrenal glands to produce hormones.  It helps maintain healthy teeth, cartilage, gums, blood vessels, and bones.

Eskimoes almost never contract scurvy! They have little or no exposure to any fruits or vegetables but contracted scurvy at dramatically lower levels than European sailors. It was later discovered that meat does, in fact, contain high levels of Vitamin C, but that it is destroyed by the cooking process. Since Eskimoes frequently eat their meat raw, Vitamin C levels in their food are high enough to protect them from scurvy. So much for the 1000 ‘s of milligrams theory. The Whole food does the trick.

Vitamin A is used in the formation of skin, bones, and teeth.  It helps maintain the surface linings of the eyes and the respiratory, urinary, and intestinal tracts. It is used therapeutically as a supplement in treating various eye problems.   Large doses can help fight acne. It neutralizes free radicals, which are corrosive compounds that may cause aging and some types of cancer.

Quinoa Carrot Salad

1 cup Quinoa (cook in 2 cups of water)

6 carrots grated (raw)

2 big clumps of broccoli (slightly steamed)

 

Dressing

1/8 cup Hemp oil

3 tbl Almond oil

½ Lime (juice)

1 thin slice of Ginger

Celtic sea salt

2 tbl salsa

Blend all of the above in a mini chop

 

After quinoa is cooked let it cool slightly

Toss all the ingredients

And serve with a legume or bean to make it a complete protein

Or have it with a protein

Simple!! Fast!! And tastes great as leftovers as well
